I heard someone did the ceremony without the priest.

How does that work?

I'm not sure what you mean by that. But about 20 years ago or so, hosts consecrated by a priest in another church were distributed by Extraordinary Ministers in churches that had no priests.

It was done by the head of the household.

Well the blessing of the image is part of the enthronement ceremony and the "head of household" doesn't have the power to do that.

Unless you speak only of the blessing of the image which can be done offsite with a priest.

Yes, the blessing can be done beforehand by a priest:

Ok.

But the ceremony itself seems to be ok to do without a priest.
