Looking for a list of the different types of liturgies the entire Church has had. Even just Latin will do.

And when it was instituted.

There really aren't that many of which we can give a definitive date of institution

Even a list of what we know has existed will do.

On that note, the Tridentine Missal existed before the Council of Trent, just wasn't universal correct?

You had others like:

Ambrosian
Gallican Rite
Saram
Lyon
Braga
Mozarabic
Monastic Rites of the Benedictines, Dominicans, Franciscans

Dominicans and Franciscans are mendicants, not monks!

Also the Franciscans have always used the Roman Rite, in fact they are partly responsible for its spread throughout Europe.

I wouldn't vouch for the complete accuracy of the list, but it looks plausible.

If we allow every use and variation, hundreds... No complete list is possible. If we count only those that were juridically treated separately, as their own organism, I think there is a source. The wiki is inaccurate (e.g the Carthusian rite is in no way of "Gallican" origin)
