I recall reading from PED (I think) that microscopic particles are not the sacrament; but rather the visible species of bread is. Not to be confused with particles/crumbs which the Church has implemented rubrics to take great care not to desecrate (cloth, keeping canonical fingers together, etc.).

Does anyone know where I can find this written in a more official capacity?

You probably can’t because it’s one of those things that people are supposed to know

You'd be surprised. Especially given all the various discussions that take place with regard to the liturgy.

If it ceases to have the accidents of bread, then it is no longer the sacrament.

I always struggle when it's put that way. Accidents do not say anything about what a thing is made of right? Even though accidents can't exist without substance.

when one starts getting down to the microparticle level, where does it stop --- the molecular level?

the way peregrinator described/articulated it is really the best way to describe it.... without further exhortation or embellishment. It is what it is....and it isn't when it isn't.

In a way, they do. Accident doesn't just mean 'thing I can see.' If you, God forbid, were to analyse a consecrated host in every way, scientifically, you would not be able to find anything that distinguished it from an unconsecrated host. Species or accidents are what we sense, and that includes, in a colloquial way, what a thing is 'made' of.
