I always thought the reason had something to do with the fact that the wine had been mixed with gall, which would have made it, at best, unpleasant to taste. Then again, didn’t Our Lord say at the Last Supper that He would not again drink wine? I know I could look it up, but I’m hoping that, by not doing so, someone who’s studied these events more than I will share his/her knowledge and insights.

I don't think so. Remember he told his disciples at the Last Supper that he would not again taste the fruit of the vine until after his resurrection, so I think the main reason he rejected it is so that prophecy would be fulfilled

In John's gospel, he took wine from a hyssop branch. He refused the first one, because the connection to the Passover would be established by waiting for the right time.

It was vinegar on a hyssop branch, not wine, although granted the easiest way to make vinegar is by opening a bottle of wine and waiting few days.
