I took six semesters in university so starting from square one would seem excessive;

But I'm out of practice since I left, how can I get back up to speed?

Paradigms have zilch to do with understanding latin as a language.

Read Lingua Latina. Buy some Latin novellas, listen to podcasts like quomodo dicitur. Focus on comprehension, not grammatical analysis and you will go far.

If you can, look into one of the living Latin things this summer. I did the Conventiculum Lexingtongiense last summer. It was great, through hard work. $150 for a week immersion. This year doing the Rusticatio by SALVI.

There is also, new this year, a lay open Veterum sapientia conference.

Podcasta latine optima sunt. I recommend Quomodo dicitur?

Nota bene, I do find value in studying Latin grammar, but, until you are at the stage of extemporaneous output, explicit grammar study does not add at all to acquisition, and can impede. The value is more for the sake of the liberal art of grammar

One professor recommended a Latin online course a few years ago, but I didn't have the leisure to make the commitment.

Do you have any courses you can vouch for, or would to suggest podcasts are better?

I can vouch for the Conventiculum, but that is in person.

Jonathan Arrington offers online courses. I can at least vouch that he knows Latin fluently.

A fellow teacher did some online course with Roberto Cafagni that he recommends
