Many of the above comments raise important points. Allow me to add one priest's perspective.

As a Catholic, you are a member of the parish in whose geographical territory you reside. You should try to go to that parish. If, for some important and enduring reason, that parish is not suitable as your parish (forget about the wedding), then you need to find another parish, in which the pastor may accept you as a parishioner. And then you must begin to worship there! Regularly. As in, every week.

Parishes are not restaurants. You don't just drive up, check out the place, and decide to go in or not. If you go into a restaurant, even for the first time, they will serve you whatever you order from the menu. A priest has an obligation to serve his parishioners - and has no obligation to accept a wedding which does not involve a parishioner.

Once you decide to join a parish and do so, then contact the priest immediately to arrange a meeting to discuss wedding plans. From your post, it would seem that you have everything planned except the Church. Churches and priests have very busy schedules, and may not be available on the date or at the time you prefer.
